The Shun Dual Core Yanagiba has the length, weight, and single-bevel design of a traditional Japanese yanagiba. The blade stock is thicker than the rest of the Dual Core series (4.5mm vs 2.5mm). This gives the knife heft and rigidity to glide through cuts with ease. This single-bevel blade offers a strong, razor-sharp edge and simplified sharpening. A gentle hollow-grind on the back of the blade makes food release easier. The Shun Dual Core Yanagiba is, quite simply, the ultimate sushi knife.
- The ultimate sushi knife; includes wooden saya (sheath)
- 71 alternating micro-layers of high-carbon, high-chromium VG10 & VG2 stainless steel extend all the way to the edge to maintain long-lasting high-performance; razor-sharp 16° edge
- Traditional octagon-shaped handle in ebony-finished Pakkawood provide a comfortable, secure grip; beautiful, durable PakkaWood won't harbor bacteria
- Rabbet tang controls weight and enhances maneuverability; this tang type is how samurai swords were commonly constructed
- Handcrafted in Japan
